L’Étoile Libre
A little France goes a long way
Happy Independence Day! And Vive La France! Like this cocktail, we needed a touch of France to help get it just right. L’Étoile Libre! Time to tip one.
L’Étoile Libre
Potion:
2 ½ oz Planteray 3 Stars
1 oz Lime Cordial
½ oz Clement Rum Agricole
2 drops/spritz of 20% saline
Lime wheel - thinly sliced.
Procedures:
Because this uses lime cordial, you can stir this one. Spritz a chilled Nick & Nora glass with the saline. Stir down the ingredients in a mixing glass and strain into the chilled Nick and Nora. Gently slide the lime wheel into the glass.
At the founding, Rum was the spirit of America just before the tyranny of Bourbon. Worth noting that the cane powering that rum was the labor of our enslaved brothers and sisters from Africa and the Caribbean. So drink with the proper circumspection. America was/is both a problem and a tremendous idea.
You could, of course, make this with lime juice and simple syrup in proportions you like, just don’t expect the clarity and shake it. Note that Planteray 3 Stars is a blended rum (Barbados, Trinidad, and Jamaica) - a regular white rum would not produce the same thing, though it would work fine.
